I know I’ll cry like a baby the first few times because I really enjoy raising all of my animals, even the ones I try to stay emotionally distant from for this reason. Thank you for your video. It is so helpful and reassuring. I’ve been struggling choosing a dispatch method and this video helped me really zero in. Its the hard part of wanting to raise your own meat, but when I think of the terrible conditions the animals whose meat we get from the average grocery store live in, I know this is worth it. Happy, well cared for, and healthy animals will provide what is needed for happy healthier people.

This is a sensitive topic and content providers often face backlash for these videos, but these types of vieos help newbies out immensely and take away some of the fear and help guide away from mistakes. vor 1 JahrIch bin selber Jäger und gelernter Metzger,ich habe bestimmt mehr Tiere geschlachtet und erlegt wie manch anderer,und Spass hat mir beides nie gemacht.Es gehört dazu,und wenn man Fleisch essen will muss man sich halt darüber im klaren sein das es nicht an den Bäumen wächst.Grossen respekt an die Reporterin die ohne vorbehalte an die Sache gegangen ist.Toller Film.

vor 7 MonatenIch selbst bin ebenfalls Jäger und bin aus vielerlei Gründen zur Jagd gekommen. Kein Grund war es, dass ich Spaß am Töten verspüre. Aber, und dass sollte jedem Fleischesser bewusst sein oder bewusst gemacht werden, für den Kosum von Fleisch muss zwangsläufig ein Lebewesen sein Leben lassen. Für mich ist Jagd die ethisch vertrettbarste Möglichkeit an Fleisch zu kommen.

vor 6 JahrenIch bin Koch und wir haben in unseren Betrieb umgestellt auf Biofleisch .. das kommt von einem Biobauern der gleich um die ecke etwa das selbe System fährt … die Fleischmenge wird jedesmal neu angepasst z.b Burgerfleisch .. Und wenn es aus ist dann gibt es kein neues bis zur nächsten Schlachtung . Und ich fühl mich auch besser als Koch und es macht mehr Spaß im Beruf wenn man mit eigenen Augen gesehen wie gut es dem Tier geht und wo es herkommt ..

vor 3 JahrenSchließe mich Mad Inius an. Vor allem was die Hybridisierung (den Heterosiseffekt) bei Selbstversorgung betrifft. Ich habe vor einigen Jahren auf Castor-Rex umgestellt, weil ich auch die Felle nutzen möchte, habe aber auch noch eine Helle Großsilber die ich mit einem CR eindecke. Da kommt dann der Heterosiseffekt voll durch. Das „optimale“ Schlachtalter …? 100 Tage ist vielleicht das, was in der Massentierhaltung (gibts ja auch bei Kaninchen) das „wirtschaftlichste“ ist. Wobei das natürlich auch ein wenig von den verwendeten Rassen abhängt. (Generell gilt: je kleiner die Rasse, desto früher sind sie schlachtreif.) Und die 100 Tage erfordern auch, dass die Fütterung hinsichtlich der Nährstoffzusammensetzung komplett optimiert ist. Also Pelletfütterung. Schafft man als Selbstversorger eher nicht, wenn man das Futter aus dem eigenen Garten (ohne Soja aus dem Regenwald), nutzen will. Ich habe bei meiner Fütterung (Grünfutter + Saaten (Weizen, Gerste, Sonnenblumen, Mais, Erbsen) aus regionalem Anbau) die Erfahrung gemacht, dass die Tiere bis zu 5 Monate gut wachsen, danach dann langsam Fett ansetzen. Was ich aber aus Geschmacksgründen auch in gewissem Maß will. Also finde ich 5-6 Monate ein gutes Schlachtalter, Das Fleisch ist noch zart, mit leichtem Fettansatz, hat aber auch schon eine gewisse Reife. All zu „weich“ sollte es ja auch nicht sein. Der „Schlachtplan“ wird aber etwas modifiziert, weil auch andere Aspekte noch eine Rolle spielen: 1. In den meisten Fällen werden Böcke miteinander unverträglich, wenn sie geschlechtsreif werden. Da ich (bei entsprechender Buchtengröße natürlich) die Tiere nie allein sondern am liebsten in Kleingruppen von 2-3 (-4) Tieren halte, geht das bei den Böcken nicht ewig gut. Da gilt die Regel: Wer stänkert fliegt raus! Böcke werden also selten älter als 5 Monate. Hat auch den Vorteil, dass sich Jungböcke doch etwas leichter abziehen lassen als ältere Böcke. 2. Im Sommer gibt’s genug Grünfutter, da kann man also auch etwas länger füttern. Wenn im Oktober das Futter knapp wird, ist es Zeit zum Schlachten, damit man nicht so viele Tiere über den Winter bringen muss. Damit hängt sicher zusammen, dass unsere Altvorderen den März als optimale Wurfzeit betrachteten. 3. Wer besonderen Wert auf das Fell legt, sollte auf eine entsprechende Fellreife achten. Da verschiebt sich dann der Termin eher auf Ende November oder in den Dezember. Ein wenig Grünfutter und Rüben gibt’s ja noch … 😉 4. Wenn beim Selbstversorger der Fleischvorrat alle ist, wird er aufgefüllt! Mal sehen wer schon groß genug ist ..;-) Ein Jahr ist aber sicherlich zu lang. Da hast du ja schon einen kompletten Winter durchgefüttert, ohne dass es noch Gewichtszunahme gibt. Und die Fleischqualität wird nach max. 7 Monaten nicht mehr besser. Ich schlachte übrigens immer 2-3 Kaninchen auf einmal. Dann hat man mehrere Fleischteile mit gleicher Garzeit, die auch gut eine Pfanne/Schmortopf füllen: z. B. 4 kleine Keulen, 4 große Keulen, 4 „Rouladen“, 4 „Filets“ (der Rücken, der beim braten so trocken wird eignet sich HERVORRAGEND zum Kurzbraten, ist nach 5-6 Minuten super zart und saftig, mit Majoran-Sahne-Soße ein Gedicht!), 2 Leber und 4 Portionen Würzfleisch (ich beine alle Knochen aus, koche sie und puhle die Fleischreiste ab, das ist das Würzfleisch) und 2 Liter leckere Brühe (alles was ich nicht für die Soße brauche wird als klare Brühe getrunken, schmeckt noch leckerer als Hühnerbrühe! Man kann auch die Leber mitkochen und klein gewürfelt als Einlage für die Brühe verwenden – ebenfalls eine Delikatesse!). Alles wird durchgegart, portioniert und dann erst eingefroren. Dann hat man immer mal schnell einen Braten parat, der nur noch aufgewärmt werden muss.. Und vor allem: Das Fleisch gewinnt dadurch noch an Geschmack (zieht besser durch) und an Zartheit! Versucht es mal! Maximale Verwertung, jedes Gramm ist zu schade um es wegzuwerfen. Schließlich musste ein Tier dafür sterben und Arbeit hat es auch gemacht. Die Knochen kriegen zerquetscht übrigens die Hühner. Echter Schlachtabfall sind nur die Eingeweide. So, und nun gehe ich erst mal die beiden Kaninchen von gestern zerlegen…! 😉

vor 4 JahrenTolles Thema zum Muttertag nach einigen Experimenten bin ich mittlerweile bei einem Alter zwischen 6 und 7 Monaten angekommen. Da sind sie ausgewachsen und nehmen tendenziell nicht mehr zu, außer tatsächlich Fetteinlagerungen. 4 Monate sind mir zu früh, wenn man 2 Monate länger füttert hat man deutlich mehr Fleisch und sie sind immer noch super zart. Man kann ja nur die Hälfte zubereiten, sinnvoller ist es die Reste einzufrieren und man hat schnell mal was leckeres auf den Tisch. LG

vor 4 Jahren (bearbeitet)Schönes Thema, auch sehr „stilvoll“ gemacht! Also aus meiner Erfahrung heraus, sind ungefähr 4 Monate auch bei kleineren Rassen richtig. Ich habe rote Neuseeländer und Rheinische Schecken (also mittelgroße Rassen) und auch hier würde ich 4 Monate ansetzen. Man muss hier natürlich eines klar sagen: Wenn ich die Tiere zur Selbstversorgung mit Fleisch halte, dann sollte man hybridisieren. Hybride wachsen schneller und werden in der Regel größer als reinrassige Tiere. Diese Erfahrung kann ich ganz klar bestätigen. Ich finde auch eine Waage sollte man parat haben. Gerade große Rassen können enorme Gewichte erreichen. Niemand möchte aber ein Schlachtgewicht von 5, 6 oder mehr Kilos haben (wer isst das noch auf?). Also hier ruhig etwas eher zu Werke gehen. Ansonsten hast du natürlich vollkommen Recht: Es gibt Tabellen auf denen man relativ genau ablesen kann wann dieser „Punkt“ überschritten wird, ab dem man unverhältnismäßig mehr Futter für einen relativ geringen Ertrag geben muss. Für die Selbstversorgung sollte dieser Punkt eine „rote Linie“ sein. Für alle anderen Kaninchen-Liebhaber natürlich nicht 😉 Danke für das Video!

vor 2 JahrenEgal wie alte, manche sind 4 Jahre und kommen in Topf (einfach lange kochen, dann braten, dann garen mache nicht 100 sondern 120) dann haben sie ein langes leben und schmecken trotzdem. Gerade bei den Zuchttieren, die man behalten will. Ach ja und Natron macht das Fleisch auch zart.

vor 5 JahrenServus. Wirklich interessant und schön dieser Beitrag. Dann gibt diese Rind halt nicht soviel Fleisch wie andere her. Macht doch nichts. Dadurch bleibt es was besonders und wenn die Tiere bis zum Schlachttag ein schönes Leben hatten gibt es auch nix zu bemängeln. So seh ich das zumindest.

vor 5 JahrenWenn man mit dem Fleischverkauf und der Zucht ausreichend erwirtschaften kann ist das sehr gut, ja. Vor allem der Verkauf von Erzeugnissen ist aber preislich viel schwieriger als er sein sollte… Hier muss sich die Gesellschaft wandeln und jeder auf sein Umfeld einzuwirken

vor 5 JahrenTolle Frau, Kompliment. Bei mir sind dieses Jahr doch relativ viele Küken stecken geblieben. D.h. die Schale wurde angepickt, aber das Küken könnte sie nicht sprengen. Vielleicht hat es an Feuchtigkeit gefehlt. Wie geht man mit solchen Grenzfällen um? Hilft man, oder nicht. Im allgemeinen sagt man ja, wenn es das Küken nicht von alleine schafft, dann wird es auch nichts im „richtigen Leben“. Die Meinung der Fachfrau (oder der mitlesenden Hühnerfreunde) dazu würde mich interessieren.

vor 2 Jahren (bearbeitet)Kabelbinder ️ Um himmels willen lasst sowas! Es gibt super elastische Gummibänder von rings 4 wings. Wenn die Küken an dumme Leute gehen, die die Kabelbinder nicht abmachen, lebt das Küken nicht lange. Ansonsten super Arbeit und Schlupf.

vor 5 JahrenVielleicht beim Züchter/demjenigen, der die Brut in Auftrag gegeben hat. Es ist eine Lohnbrüterei, dort kann man Eier hinbringen von Rassen, die man z. B. selbst hält und die nicht brutfreudig sind.

Das erinnert mich an mich selber, ich war auch schon bei der Geburt und danach ein Spätzünder, aber später habe ich nach der dreijährigen Krankenpflegeausbildung 14 Jahre in einer Fachklinik für Psychiatrie und Psychotherapie gearbeitet, da ging es manchmal ganz schön zur Sache. Der „Nachzügler“ sieht für mich eher nach einem nicht lebensfähigen Küken aus, die man beim Brüten immer mal dabei hat. Wahrscheinlich hat hier der Bauer den Reporter oder es haben beide gemeinsam den Zuschauer veräppelt…
